Debs Soft Lemon Cookies

3 cups standard flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
225g butter
1 ¼ cups white sugar
1 tsp vanilla extract
2 tbsp lemon juice
1 tbsp lemon zest
1 large egg at room temperature
For The Icing
2 cups icing sugar
3-4 tbsp lemon juice
2 tsp lemon zest
½ tsp vanilla extract
Heat oven to 160 deg fan bake.
Line 2 baking sheets with baking paper.
Cream butter and sugar until light and fluffy, about 2-3 minutes with electric beater.
Add egg and beat to combine.
Add vanilla, lemon juice and lemon zest and beat to combine.
Add dry ingredients and mix until combined.
Roll into balls, about 1inch, and place on cooking sheet about 2 inches apart to allow for spreading.
Bake 10-12 minutes until the edges look done but the centre will still look slightly soft.
Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
To make the icing mix all the ingredients to a smooth consistency, then spread on the cooled cookies.
Makes about 30 cookies.
Cheese ball
1 packet cream cheese,225 grams
1 cup tasty cheese, grated
1 teaspoon curry powder
2 spring onions, chopped
2 teaspoons parsley
1/2 teaspoons garlic powder
1/3 cup of fruit chutney
Mix altogether, rollin chopped nuts. I used walnuts.
Lavosh Recipe
1 cup flour
1/3 cup wholemeal flour
2 teaspoons black and white sesame seeds
1 tablespoon dried oregano
1/4 cup olive oil
1 teaspoon sesame oil
1/2 cup water
1/4 teaspoons chilli powder
1 teaspoon chilli flakes
Mix all together, divide into 4. Roll each piece between 2 pieces of baking paper until quite thin, sprinkle with salt. Cut into pieces. I use a pizza cutter. Bake about 15 minutes @ 170 C. Until golden brown

Whole Orange Cake - Rind and all

Boil 2 oranges for 40 minutes, then cool.
Chop oranges to remove pips.
Blitz orange in processor then add:
250g almond meal
250g sugar
2 tsp baking powder
6 eggs
Then blitz until well combined.
Pour into lined 20cm tin and cook for 60 minutes at 140 degrees fan bake
(until golden brown).
